Named after the vibrant Berawa postcode, the 80361 Cocktail by Justin Parfitt at Kasianda combines Jim Beam bourbon, house-made strawberry-guava syrup, pineapple tepache, and a touch of black walnut bitters for a refreshing yet complex tropical drink. Balinese guava and strawberries add sweetness, hibiscus tea gives floral depth, and the tepache (made from pineapple peels) brings a hint of earthy, tropical tang. Notes
The 80361 cocktail is a true tropical delight, crafted with local ingredients that highlight Bali’s unique flavors. The Jim Beam bourbon base brings smooth warmth, while the tepache’s earthy, slightly fizzy profile enhances the drink’s tropical character. The syrup balances sweet and floral, giving each sip refreshing depth. When garnishing, edible flowers and herbs arranged to evoke Bali’s rice fields add a special visual and aromatic touch.
The 80361 pairs beautifully with smoked or barbecued meats, balancing savory richness with fruity, floral undertones for a flavor journey that’s purely Bali.
