Peel and Slice Oranges:

  • Peel and slice the oranges. Place the peel in a large nonreactive saucepan.

Add Spices and Sugar:

  • Add 12 cloves, 1/2 tsp of mace, 1/2 tsp of nutmeg, 1/2 tsp of allspice, 1 cinnamon stick, and 1/4 cup of sugar to the saucepan.

Add Water:

  • Pour in 2 cups of water and stir frequently to dissolve the sugar.

Heat:

  • Set over medium-high heat and bring to a boil, stirring occasionally.

Add Red Port:

  • Once the mixture reaches a boil, reduce the heat and add 750 mL of red port. Continue to heat gently, making sure not to let it boil.

Serve:

  • Strain out the spices and orange peel before serving.
