Balinese guava and strawberries add sweetness, hibiscus tea gives floral depth, and the tepache (made from pineapple peels) brings a hint of earthy, tropical tang. Served in a coupe glass and garnished with herbs and edible flowers, it’s a delicious nod to Bali’s iconic rice fields.

Ingredients

  • 60 ml bourbon
  • 25 ml Guava-Strawberry-Hibiscus Syrup see below
  • 15 ml Pineapple Tepache see below
  • 15 ml Fresh lime juice
  • 6 dashes Black walnut bitters
  • Egg White for a velvety texture
  • Edible herbs or flowers for garnish

Instructions

Combine Ingredients:

    In a shaker, add bourbon, syrup, tepache, lime juice, bitters, and egg white.

    • Shake with Ice:
    • Add ice, shake vigorously, then strain into a coupe glass.

    Serve:

    • Top with a garnish of herbs or edible flowers arranged to resemble the Balinese rice terraces.

    Guava-Strawberry-Hibiscus Syrup:

    • In a saucepan, combine:
    • 1 cup guava pulp
    • ½ cup strawberries
    • 1 cup hibiscus tea
    • ½ cup sugar
    • Simmer until reduced by half, then strain and cool.

    Pineapple Tepache:

    • In a large jar, combine:
    • Peel of 1 large pineapple
    • ½ cup sugar
    • 3 cups water
    • Cover with cloth, let ferment 1-3 days, stirring occasionally. Strain and refrigerate until needed.
