This Cooked Eggnog is a silky, creamy holiday drink that’s both safe and delicious. With a custard-like texture and a light ivory color, it’s perfect for sipping by the fire or serving at holiday parties. The warm vanilla, nutmeg, and hint of caramel add a comforting aroma, while the cooked eggs give it a thick, satisfying richness.

Make Caramel Base:

  • In a medium saucepan, combine 1 cup of granulated sugar, 2 tbsp of water, and the lemon juice. Bring to a boil, then cook for about 5 minutes until the mixture turns a deep amber color.

Remove from Heat:

  • Carefully remove the caramel mixture from the heat. Slowly add the ½ cup of water while stirring to thin the caramel. Set aside.

Prepare Egg Mixture:

  • In a large bowl, whisk together the eggs, additional 1 tbsp of sugar, and salt until smooth. Gradually add the milk and cream, stirring until fully combined.

Cook the Eggnog:

  • Return the saucepan with caramel to medium-low heat. Slowly add the egg mixture, stirring constantly. Cook, stirring gently, for 10-12 minutes until the mixture thickens slightly and reaches 160°F (71°C). Do not let it boil.

Finish with Vanilla and Nutmeg:

  • Remove the pan from heat, and stir in the vanilla and nutmeg.

Chill or Serve Warm:

  • Pour the eggnog into a pitcher and chill in the refrigerator for at least 2 hours if serving cold. Alternatively, serve immediately while warm, topping each glass with a light sprinkle of nutmeg.

Notes

This cooked eggnog has a smooth, thick texture with a creamy consistency that coats the glass. The caramel base adds a rich depth of flavor, making this eggnog feel indulgent and luxurious.
