The Watermelon Mojito is a perfect summer cocktail that combines the juicy sweetness of watermelon with the refreshing mint and zesty lime of a traditional mojito. This fruity twist makes for a delightful and visually stunning drink, perfect for any summer occasion.
Ingredients
- 6 Mint Leaves plus additional for garnish
- ½ cup Watermelon plus more for garnish
- 2 oz White Rum
- 1 oz Lime Juice
- 1 oz Sugar Syrup
- 2 oz Soda Water
- Ice for serving (try clear ice)
Instructions
Prepare the Ingredients:
- Chop ½ cup of watermelon into small cubes.
- In a cocktail shaker, muddle 6 mint leaves to release their flavor. Add the watermelon cubes and muddle again until they turn into juice.
Mix the Cocktail:
- Add 2 oz white rum, 1 oz lime juice, and 1 oz simple syrup (or maple syrup) to the shaker. Fill the shaker with ice and shake until cold.
Serve:
- Add ice to a glass. Strain the liquid from the shaker into the glass.
- Top off the glass with 2 oz soda water. Garnish with additional mint leaves and watermelon wedges.
Pitcher Variation (8 servings):
- Muddle 4 cups of watermelon into a juice (or use 2 cups of watermelon juice). Add to this Mojito Pitcher recipe, and garnish with additional watermelon slices.
